Ingredients:
- 2 chicken breasts, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
In a small bowl, mix soy sauce, oyster sauce, cornstarch, and sesame oil
Set aside
Heat vegetable oil in a wok or large skillet over high heat
Add minced garlic and grated ginger
Saut for 30 seconds
Add sliced chicken and stir-fry until no longer pink, about 3-4 minutes
Remove chicken from the pan and set aside
In the same pan, add more oil if needed and stir-fry the vegetables until they are tender-crisp, about 5 minutes
Return the cooked chicken to the pan and pour the sauce mixture over everything
Stir-fry for another 2-3 minutes, or until the sauce thickens and coats the ingredients evenly
Season with salt and pepper to taste
Serve hot over steamed rice
